Taste of Tuesday: Pasta Salad

**We will be taking a little break from Taste of Tuesday starting next week.  Ash and I both have a lot going on in our lives and need some time to focus on those things.  We're planning to start it again at some point when our lives are a little calmer.  Thanks for understanding.**


Ingredients:
- Pasta (I used elbow macaroni)
- 1 medium purple onion, chopped fine
- Olives, sliced
- Italian dressing
- Serrano peppers, chopped
- Salt & pepper to taste
Directions:
- Cook the pasta according to the package, drain and let cool
- Chop the onion and jalapeƱos 
- Slice the olives
- Once the pasta has cooled, add in the Italian dressing to lightly coat the pasta (depends on amount of pasta used)
- Mix in onions, peppers and olives.
- Add salt and pepper to taste
- Mix well and refrigerate 
- Enjoy!

Taste of Tuesday: Beef Stew



Happy Tuesday, loves! Hopefully everyone is staying warm since the US averaged a temp of 12 degrees yesterday - BRRRR!!!! Since it's stew weather and all, we made beef stew the other weekend and it was perfection. Here's the low down.

Ingredients:
- 2 pounds stew beef
- 2 tablespoons vegetable oil
- 2 cups of water
- 1 tablespoon Worcestershire sauce
- 1 clove garlic, chopped
- 1 medium onion, sliced
-1 teaspoon salt
- 1 teaspoon sugar
-1/2 teaspoon pepper
- 1/2 teaspoon of paprika
- 3 large carrots, sliced
- 3 ribs celery, chopped
- 5 large potatoes, cubed

Directions:
- Brown meat in hot oil
- Add water, Worcestershire sauce, garlic, onion, salt, sugar, pepper and paprika
- Cover and simmer 1 1/2 hours
- Add carrots, celery and potatoes
- Cover and cook 30-45 minutes longer

Taste of Tuesday: Crockpot Chili!


Happy Tuesday, loves! I hope everyone has been staying warm! Dallas got hit by #IceMaggedon this past weekend and the entire city basically shut down. It was pretty awesome staying in sweats all day and just relaxing and getting things done around the house. We did have to venture out on the ice to the store, since I didn't plan properly - we literally had zero groceries! Neither did the grocery stores.. but we made do.

We searched our pantry and had all the fixings for crockpot chili. So good and perfect for a 20 degree day by the fireplace!

Ingredients:
- 1 pound hamburger meat
- 1 15oz can of tomato sause
- 1 15oz can of diced tomatoes
- 1 16oz can of kidney beans
-1 16oz can of cannelloni beans
- 1 package of chili seasoning 
- 1 small onion
- Cheddar cheese, shredded

Directions:
- Brown hamburger meat and onion until done; drain grease
-  Transfer cooked meat to crockpot
- Add beans, tomatoes, sauce and chili seasoning
- Stir well
- Cook on low for 4-6 hours or on high for 2 hours
- Top with shredded cheese and/or sour cream
- ENJOY

Spinach, Tomato & Goat Cheese Omelet!

Happy Tuesday, loves! I hope y'all had a great Thanksgiving! One of my favorite things to do on the weekends is make breakfast with Tyler. This past weekend was the first time in 6+ months that we've actually been able to cook breakfast! We're on an omelet kick, so I thought I'd share...


Ingredients:
- Eggs
- Tomato
- Goat Cheese
- Spinach
- Butter


Directions:
- Heat omelet skillet and add a tab of butter
- Whisk 3 egg whites and add a touch of water (optional)
- Dice tomatoes and spinach
- Add egg whites to pan and cook to your liking
- Flip and then add ingredients
- Enjoy!

Taste of Tuesday: Taco Salad

Taco salad is a weekly staple in our house. When Tyler and I were dating, I made this and he LOVED it! It's the easiest dish to make and so delish! Here's my spin on taco salad!


Ingredients:
- Hamburger meat
- Lettuce
- Rice
- Frito's
- Cheese (grated)
- Ranch style beans
- Onion
- Taco seasoning
- Salsa


Directions:
- Brown hamburger meat with onion until done
- Mix in taco season based on packet instructions
- Cook rice based on box
- Heat the Ranch Style Beans on the stove
- Chop lettuce and shred cheese
- Make your plate 
(place Frito's first - then rice, hamburger meat, beans, cheese, lettuce and salsa)
-ENJOY!

Taste of Tuesday: Famous Chili Dip


Are y'all ready for one of the best dips ever? My aunt always fixes this appetizer before her get togethers, especially Thanksgiving and Christmas. It's one of my favorites. I mean how could you not love cheese, chile and cream cheese?! I love it with Ritz crackers or Frito's Scoops - there's something about the combination that makes it even more delish.

Ingredients:
- 16 oz Wolf Brand Hot - no beans chili
- 8 oz Cream Cheese
- 1 small onion, chopped
- 2 Jalapeno, chopped
- 6-8 oz cheddar cheese, grated

Directions:
- Preheat oven to 350
- Chop onion and jalapenos 
- Press room temperature cream cheese in a baking dish (9 inch round or square)
- Top the cream cheese with onion and jalapeno mixture (spread evenly)
- Add 3-4 oz of grated cheese evenly
- Spoon the chili from can and spread out evenly
- Top with the remaining cheese
-Bake at 350, covered, for 30 minutes
- ENJOY!

Grilled Venison Backstrap

Happy Tuesday! I know my posts have been few and far between, but that will all be changing soon - pinky promise! And I'll also be catching up on all of your blogs, which I've been missing.. I've been slacking MAJOR.


First things, first - I'm not the biggest fan of venison, but with the right marinade it can be ah-mazing! This marinade is one for the books. Sorry for the lack of pictures... I left that part up to Tyler and he failed forgot.

Marinade Ingredients:
- 2 pounds venison backstrap, cut into 2-inch chunks
- 1 Quart Apple Cider
- 2 (12 ounce) bottles BBQ sauce

Additional Ingredients:
- 1 1/2 pounds thick sliced bacon
- Salt & Pepper
- Toothpicks


What to do:
1. Place chunks of venison into a shallow baking dish, and pour apple cider in to cover them. Cover and refrigerate for 2 hours. Remove, pat dry and discard apple cider. Pour BBQ sauce to cover meat, cover and refrigerate for 2-3 more hours

2. Preheat grill. Remove meat from the refrigerator and let stand for 30 minutes. Wrap each piece of venison in bacon and secure with toothpicks.

3. Grill slowly, turning occasionally, for about 15-20 minutes.

Caribbean Favorites!

Bon Bini, loves!! As you may or may not know - Tyler and I are enjoying our last few days in Aruba, so this post will be short and sweet! Sorry for the lack of posts {and planning on my part}!! All blogging will be back to normal next week and I've got an adorable Texan guest posting tomorrow, and you won't want to miss it!

I wanted to share a few of my must-haves while vacationing in the Caribbean! Jerk Chicken is oh-so-good! I remember having it for the first time in Jamaica after an excursion of kayaking and zip lining - I've been hooked ever since! The flavors are amazing and just scream Caribbean. Definite must try... so good with Balashi, a local Aruban beer!! Fried Conch.. this is amazing. It's a bit different than calamari, but is equally delish! Another must try. This is huge in Aruba and also in the Caymans, which is where we first tried it! The ultimate drink by the pool or on excursions is definitely rum punch! This has been a staple on our trip for sure - Strawberry puree, pineapple juice and dark rum... pure heaven!

Taste of Tuesday: Favorite Snacks!

Hello from sunny Florida! Since I'm traveling and missing my trusty snacks, I thought I'd share them with y'all! These are my go-to snacks between meals and are perfect to grab for pre and/or post workouts! You can't go wrong with these 3 combos.. sometimes I switch it up and have peanut butter with my celery - so good!

Taste of Tuesday: My Favorite Salad!

Happy Tuesday! This is my absolute new favorite salad!! We had dinner at our friends house a few weeks ago and Kristen made this salad! SO healthy and so, so good! Since then I've probably made this salad about 6 times. It's the perfect combination of flavors with the feta, grapes and dressing! Kristen's definitely my go-to for great {and healthy} recipes!! :)

Ingredients:
- Spinach & Arugula mix salad
- Feta Cheese
- Grapes (halved)
- Lemon Juice
- Olive Oil
- Salt & Pepper


Dressing Directions:
In a small dish, mix the following well:
- 1 Tablespoon of Lemon Juice
- 2 Tablespoons of Olive Oil
- 10 Twists of Fresh Ground Pepper
- 4 Twists of Sea Salt

Place about 6-7 grapes (halved) and feta cheese on top of your lettuce. Drizzle the dressing on top and mix well with tongs. Enjoy!!

Taste of Tuesday: Love for Dove!


Happy Tuesday, loves! Tyler went Dove hunting over Labor Day weekend and I was so excited for him to get home with the goods! Last year he went hunting and gave all his dove to a client. He knew better this time and came home with over 15! I love to stuff them with jalapenos and cream cheese and then wrap them in bacon! SO good!

Ingredients: 
- Dove Breasts
- Bacon
- Cream Cheese
- Jalapenos
- Toothpicks

Directions:
1. Chop the Jalapenos
2. Lay out bacon and cut in half
3. Butterfly the dove breasts
4. Set out cream cheese and toothpicks
5. Place jalapeno and cream cheese on the butterflied dove breast
6. Fold closed
7. Wrap in bacon tightly
8. Secure with toothpick
9. Grill to your liking
10. ENJOY!!
