Hey everyone! Arugula is my newest obsession.. I love it on everything - especially pizza! When I saw this recipe in Giada De Laurentiis' Everyday Pasta cookbook, I knew it was a must-try! Every weekend Tyler suggests that we cook this and this weekend, we did!
Ingredients:
- 2 New York strip steaks (8 ounces each)
- 1 teaspoon of Herbes de Provence
- 1 garlic clove, minced
- 3/4 cup plus 3 tablespoons of extra-virgin olive oil
- 1 pound of penne pasta
- 1/4 cup of balsamic vinegar
- 2 Tablespoons of Dijon mustard
- 1/4 cup of chopped fresh basil
- 1/4 cup of chopped fresh flat-leaf parsley
- 2 cups of baby arugula
- Salt and Pepper, to taste
Step 1: Season the steak with salt, pepper, Herbes de Provence and the minced garlic. In the meantime, bring a large pot of water to boil and cook pasta according to directions. |
Step 3: In a small bowl, whisk together the balsamic vinegar, Dijon mustard, 1/2 teaspoon salt, 1/2 teaspoon pepper, basil, parsley and 3/4 cup of olive oil. Mix well. |
Step 4: Once the pasta is done, save 1/4 cup of reserved pasta water and drain the rest. In a large bowl, toss the pasta with half of the salad dressing and the reserved pasta water. |
Step 5: Thinly slice the steak. Add in steak, arugula and remaining dressing to the pasta mixture. Stir well and enjoy! |

I need to make this!! Joey is being deprived of steak at our house so I think I could handle this recipe! I did make meatloaf last night - so he got a little bit of red meat, ha!
ReplyDeletehaha! I want to try it with Filet Mignon next time.. it would be more tender! If y'all like blue cheese crumbles or Gorgonzola..try topping it with that.. Tyler did and said it was awesome! :)

ReplyDeleteYum! The only problem is that my husband HATES penne. It's so weird. So I'd have to use a different pasta :) But this looks great!
