Tuna Pasta Salad


OK, if you know me - you know that I cannot stand don't like tuna, so this post might be a bit surprising. Tyler, however, LOVES tuna.. he could literally have tuna, in some form or fashion, every.single.day. We came up with our own concoction to spice-up, the normally boring, tuna salad. It's healthy, easy to make and budget friendly! You can make this recipe with items that are probably already in your fridge or pantry. See below for the scoop!


Ingredients:
- 4 regular sized cans of Tuna
- 4-6 eggs (optional)
- 1 box of pasta (we used whole grain Rotini pasta)
- 1/3 cup of Mayonnaise (add more if wanted/needed)
- 4-7 Baby Dill Pickles - chopped
- 1/4 cup of Chopped Onion (optional)
- 2-3 Jalapenos - chopped (if you like to spice it up) 
- Preferred Spices (we used: salt, pepper, cayenne pepper, paprika and garlic salt)


Step 1: Bring water to a boil and boil eggs, uncovered, for about 20 minutes.  (You will notice that we've got some extra eggs boiling.. We made extras for our Blue Cheese Deviled Eggs - Recipe coming soon!!)
 
At the same time, start boiling water for the pasta - then cook as specified on the box.   

Step 2: Mix tuna, mayo, jalapenos, pickles and onion together in a mixing bowl.
 
Step 3: Once the pasta is done, drain in a colander and run cold water over the pasta to stop it from cooking further. Let stand in the sink for about 10-15 minutes to let pasta dry completely. *Note: We only used a portion of the pasta and saved the rest for spaghetti.
 
Step 4: Once the eggs are done, rinse with cold water. Once they are completely cooled, peel and chop. *Note: you may choose to use or omit the yoke.
 
Step 5: Mix all ingredients together to make sure everything is mixed evenly. Then add the above-mentioned seasonings to your liking and mix again. Once this is seasoned just right, I sift Paprika along the top layer, cover and refrigerate. 
 
Enjoy by itself (like above) or put on flat bread to make a wrap!
